Roll up Person Last Activity Date to Organizations

I am trying to set up a view of Organizations that have had no activity in over a year so we can reassign them to new salespeople. However, I am noticing that activity at the Person level does not roll up to "Last Activity Date" in the Organization.
Does anyone have a method for handling something like this?

Hey Jay,
Your activities are linked to the contact but also to the organization ?
Because on the last activity date it's the same than the contact side.
