Improvements needed on Workflow Automations for Projects

I would like to automate an email to send to a custom field 'Person' on a Project when a Project is updated. But it appears that you cannot choose a custom field 'Person' as an email recipient. However, you do seem to be able to do this when updating a 'Deal'.
Projects currently seems quite limited on functionality vs Deals
