Link Emails to fields other than Lead or Deal or multiple Leads/Deals.

Currently Pipeline allows a user to link an email to either a Lead or a Deal. But there are no other options NOR is there a way to link an email to multiple Leads or Deals.
Example #1: I am developing a relationship with an Organization (multiple companies under said Org). I want to quickly view/track emails related to that Organization in the Link Field. My thought is to make a the Organization as a "Lead" but that might inflate certain aspects of reporting?
Example #2: I email a Person about multiple Leads or Organizations. But I can only Link to one Lead or Organization. I want to track in multiple projects...
