Hide deal fields from the "Add new deal" window

Hello, we would really like to be able to hide the default deal fields from the "add new deal" window since there are several that we don't use like Organization, Probability, Labels and expected conclusion date.
We would also really like to be able to hide the deal fields that are "Obligatory only when marking a deal as won", since those are, by design, fields that we want to fill in at the end, not the beginning
