Expand automation merge fields for Projects

We recently set up an automation to create a Project when a Deal is won. I've been using the merge fields to generate background information on the account, which is very useful.
However, you can only draw a limited amount of information from linked Organizations (mostly the Deal), such as name, address, etc. If it's possible to add merge fields for Organization custom fields too, that would help us keep information in the right places and avoid duplication.
