Is It Possible To Block Users From Editing Deal Probability

I have fixed probabilities set up for each of my pipeline stages, and we only assess this data on a whole company level, so I don't want users to change their own individual deal probabilities, as this skews the higher level stats.

Is there a way to block users from editing individual deal probabilities?
