Is there a way to set the dashboard chronologically so the deals are listed by last customer touch?
Would also love to have things like Overview and other fields available....

Can you clarify what dashboard you are talking about?The pipelines is sorted as mentioned here.
However, in the list view you can add many data fields in your overview. The "last update time" field can be added as well and you can sort by or for example by "last activity date". This way you can order it by date Peter.
