Dynamically calculated due dates for activities

Hi PD community,
I'm looking for an advanced way to define due dates. Currently we have either static due dates (e.g. 7 days after creation) or dynamic due dates based on the exact value inside a deal custom field.
We have a couple of use cases where we want to define the due date based on the date inside a custom deal field but not the exact date but either a couple of days before or after this specific date.
We need an option to combine those, i.e. an activity needs to be due 7 days after the date defined in a date custom field. Has anybody found a way to do that?
