Set both Subscription and Payment Schedule in the same Deal

I'd like to be able to set both a subscription and a separate payment schedule in the same Deal and don't currently see a way to do that. For example, the proof of concept fee or upfront fee is paid in intervals with different amounts, but then I also need a monthly subscription fee schedule once the POC is completed. The only workaround I can think of for now is to enter the POC fee initially, then when that is complete, delete and then enter the subscription info. But I'll still lose the POC fee in history. Any other ideas?
