Why are data fields required through the pipeline?
Is there any way to change this. If I want a data field in one stage, why is it required for the subsequent stages????

Your admin set it up this way.
I would reach out the person in your company who initially set this up0
Indeed, this is a setting that the Admin user has set up. They are able to select needed Pipelines and stages under Company Settings > Data fields as explained here: https://support.pipedrive.com/en/article/required-fields
However, indeed as there is a logic of a Deal moving left to right through all stages, then by that logic it is needed that next stage also requires the same field. Hope the article gives some more information!0
