Can Workflow automations include both deal and contact fields?

Deal stage changes.
Email template is triggered, based on which template was previously sent to the contact. (contact field,NOT deal field)
Once workflow automation is completed, contact field is updated to reflect the most recent email they received.
Goal is to send unique emails regardless of the number of deals a contact is connected with throughout the year.
Rinse and repeat. Possible? I can't figure it out if it is!
