Since posting this query, I have found a couple of solutions using Flatly and Coupler.
I like Coupler more since it has a much cleaner user experience.

You can use 3rd party app - https://www.import2.com/apps/pipedrive - which allows you to setup scheduled exports of any data from Pipedrive including contacts, deals, activities, ... it also allows you to select the fields you want to be included in the export file0

I have downloaded an app as suggested and yes I can extract almost all the information I need - however I am still unable to extract the "note"s and the "done" Activity notes (past and present).0

Yes, there is another 3rd-party app called Skyvia. It allows us to automate export Pipedrive data to CSV: https://skyvia.com/data-integration/pipedrive-csv-file-import-and-export

Have you maybe considered automating this process? You could monitor new data in your Pipedrive and automatically push it to a Google Sheet let's say every Friday.
