Linking an organization is optional. You can always leave it empty and just use the contact person and link it to the deal!

@Adam Sztuka - I use Pipedrive for my Direct-to-Consumer client in 3 different regions. It works wonderfully well. As @Mike van der Valk said, you don't have to use Organizations.
The business did 5x more in monthly sales, year-on-year (Sep'19 vs Sep'20). We only started using Pipedrive in Jan 2020.
