Totally a must Have , once the project/sale is complete/deliver/ or close because it's lost, you don't want to loose the data/stats of your sales but you don't need to see those deals in the pipeline anymore so I would totally agreee to have the ability to mark them as complete or to archive those kinds of deals.1

I do this with a custom fields and workflow automation.
example: when I tick "Project Complete" custom field, the workflow automation kicks in and sends deal to my archive pipeline.
work great for me.
