How do you work with deals?

Hey together!

I am just wondering how you all work with different Products and Deals?

The case:

We have different products. Do you create for every product a single deal?

e.g.: Deal1: Product a - Customer 1

Deal2: Product b - Customer 1

and so on....

Or do you work with one deal per company / customer, including all your products?

-> In this case: When is your deal won?

    A deal is a single sale.

    I have 100's of deals per organizations/company after years of use.

    All of those individual deals have 1000's of products sold under it.
