contact "postal address" option in email templates

Hello, for my business I send a lot of emails and text messages to current customers and prospective customers. Many times I'm messaging them to confirm their home address. I'm not sure why only "some" fields are an option in email templates and documents and some are not. Please please please just open it up so that ALL fields can be selected for email templates and documents. Contact fields, company fields, deal fields, product fields
