Creating a filter to show only blank email AND phone fields.

I've tried several variations on the filters with no success. I don't see a "blank" or "Null" or similar operator.

What I need to do is bulk-delete all of the contacts that have blank email AND blank phone (name-only contacts are not useful to me).

Try 'is Empty' option from the dropdowns.

How about if the organization field is blank? Is empty isn't an option.
