Missing field in the deal "Deal probability"

Hello,

As far as I understood there should be the ability to set the probability for each deal separately. Unfortunately, I cannot find the field or button for it. I am the admin and the only user in the system. Does anybody know how to fix it?

Deal Probability is a setting that needs to be turned on in each pipeline.
