Filter selecting all contacts of a deal
How can I create a filter whereby I select all persons that are related to an organisation (not only the selected contact person) that have a deal in a specific stage?

This is doable, but is a little bit of a process.
First, you will have a filter to get your lists of Orgs. That will look like this:
Then, you will create a Person filter with each of those Orgs. That will look like this:
If this is a one-time need, this would work fine. If this is something that you will need on an ongoing/recurring basis, there is unfortunately not a great solution.
