Best practice E-Mail automation for proposal sent follow up?

Hi.
Whats the best way to create an automation that automatically sends follow up emails after a proposal has been sent to the contact.
The automation has to be manually stoppable.
The trigger "E-Mail answered" is not good enough, since the trigger could also be a phonecall, a meeting, an appointment-booking etc.
I am thinking about
a) Creating a separate proposal pipeline and activate/deactivate the E-Mail automation via stages.
b) Triggering the automation via a custom field.
c) Triggering the automation via a Tag.
What are your ideas?

Use a tool like Pandadoc or Better Proposals.

Definitely not A as that’ll create metrics issues - you never want to move deals to different pipelines, if you can avoid it!
B is a great option. You could simply have a field “Proposal Automation” with the options On / Off and have your reps manually update that field to control whether the automation is running or not.
