How do I create a list of sum total (£'s) of deals won by customer in specific time period?

I would suggest considering building a data pipeline using Coupler or Coefficient.

You can then visualize the data from Google Sheets using Tableau or Looker Studio, or even Google Sheets.

You can also use the list view and apply a filter for deals won over a period of time by a specific person or organization. The list view can show you the total value of the deals being shown.
