the actual situation to export your deals' information, including products has two options:
1- go to Tools and apps, export data, products added to deal and export excel file: in this scenario you get details of products quantities but there is no possibility to amend or choose which data you want to export in this report, many field are missing.
2- to export deals list by adding products to the view list: in this case the export file will show only the total amount for quantity and value of products.
having details exported list of products in pipeline will be very helpful to manage stock forecast to arrange purchase accordingly , it is not only related to revenue forecast

I would suggest considering building a data pipeline using Coupler or Coefficient.
You can then visualize the data from Google Sheets using Tableau or Looker Studio, or even Google Sheets.
