Does someone know how I can pin a note to a deal in pipedrive?

    create the note and then hit the ellipsis.

    Is there a way to make it a default, so work that way on all new leads?

    I don't think so. do you mean work that way on all new 'notes'? 

    You can simply filter to all notes by selecting the filter right above and you will only see notes if that helps.
