Editing process / fields / stages

Hi everyone! We've been on pipedrive for about year now and are going through some growing pains. As we prep our operations for efficiency and scale, I'm wondering how people handle editing the fields / stages and automation without breaking what's in flight.

It'd be ideal if we had a staging environment where we can optimize the workflow and setup, but I'm not seeing any option like that.

Anyone have a good process for optimizing the workflow and setup?

    You can create a demo org [on a 14-day free trial] and test things out in there.

    There is no concept of sandbox [staging] vs production environment at the moment in pipedrive.
