Is there a way to create a custom report to track average value of won deals?

    Not inside Pipedrive at the moment, use Zapier or via api

    sure, in insights you can build a report that shows the average deal value.

    Sorry I mean a column chart or something that would show this monthly or quarterly rather than only 1 value for the selected timeline.
