Using contact fields / merge tags in links in email body

We at StoryXpress are building an integration that will primarily let Pipedrive users attach video links in their emails and in order to make those links trackable there needs to be a query parameter in the URL that holds the email of the recipient.
Here's what Pipedrive currently allows us to do with the Insert field option as depicted below,

So the question is that do we have an alternative to this like say we want to attach links to images and make them clickable where the link needs to hold a contact field, how does one do that in Pipedrive?
Note- Also these fields are known as merge tags and merge fields in some tools.

Another problem is - this link won't be clickable — at least not in clients like Outlook. So the main issue here is a way to make this links clickable. I wrote about this several times.
