If I go to my "SENT" folder in e-mails and I see the email address under the "To" whom the email should have went to and I see "To: 0 undefined", does that mean the email didn't send even though there is an email connected to the contact? I didn't get a bounce-back message saying it wasn't delivered.

What you described does not seem like expected behaviour. I made some adjustments to your company accounts, so I'd like you to clear the cache and cookies in your browser and try again.
